Eatery serves 'mystery' meals from cans salvaged from quake

Call it culinary Russian roulette, or call it returning a favor. But when you order the fish at the restaurant Sabanoyu, you never know exactly what you'll get.

Located in the Kyodo neighborhood of Tokyo's Setagaya Ward, the place serves up delicacies from the Kinoya Ishinomaki Suisan cannery in Ishinomaki, Miyagi Prefecture. The cannery, once a landmark with its 10.8-meter water tank painted to look like a giant can of stewed whale, was all but flattened by the tsunami following the Great East Japan Earthquake of March 11. The cans on offer at Sabanoyu, lacking labels, dented, some scribbled with question marks, were pulled out days later from the debris.

"The cannery helped us bring life back to this neighborhood, and now it's our turn to help them," says Yasunari Suda, a comedy writer, community organizer and owner of Sabanoyu. The neighborhood's link to the cannery goes back nearly two years, when Suda enlisted its help in revitalizing the old shopping street. Like many other traditional neighborhood centers, Kyodo's was turning into a "shuttered town," with customers drawn away by the opening of megastores and chain restaurants along a trunk road nearby.

The locals, Suda reasoned, needed to do something attention-grabbing but at the same time play up its small scale. The result was a neighborhood-wide miniature painting contest -- on cans provided by Kinoya Ishinomaki Suisan. Several eateries got hooked on the taste and started offering canned fish in their dishes -- among them ramen -- turning the neighborhood into a stop for curious diners.

"I ate a lot of canned fish when I was young, especially mackerel, because my mother didn't have much money," explains Suda. "It's always been my favorite fish, because it's the fish of the masses." The name of his restaurant, which also serves as a public stage, means "mackerel bathhouse."

The neighborhood was holding its second can painting exhibition when the tsunami hit Ishinomaki. Soon after, Suda collected relief supplies from his friends and neighbors and headed with two light trucks up to Miyagi Prefecture. On the return trip he stopped the trucks at the flooded Kinoya cannery and loaded up with muddied cans.

The cans have now been scrubbed clean by neighbors and feature in such dishes as in-the-can souffle and mackerel hamburger. Yet, without labels, however, the cans themselves can't be legally sold. Instead customers get a can in return for a 300-yen donation.
